TACO POCKET PIE

I have to confess, I eat a LOT of tacos. Like once a week. Probably like most Swedish people, we eat a lot of tacos in this country. But sometimes I get a sudden urge to change it up a bit, so I came up with this one. A pocket pie. Its easier to eat, totally date night approved with no mess (the nightmare to try and eat tacos neatly in front of a date, and probably fail miserably  and it looks really cute. These also taste just as good eaten cold, if you want to take them with you on a winter-picnic.

Taco pocket pie 

2 sheets puff pastry
500 g minced beef
3 tbsp taco-seasoning
1 tbsp tomato purée
4 tbsp sour cream
1 can of sweet corn
1 ripe avocado
Egg for egg-wash
Handful of grated cheese

This is how you make them
Remove the puff pastry from freezer and leave it at room temperature for about 30- 40 minutes until they are easy to handle. Meanwhile, add the beef to a large pan and let it brown up in some butter. Then add in the taco-seasoning and tomato purée, let it cook for a additional 3-4 min before letting it cool down.

Preheat the oven to 200 degrees. Cut the puff pastry into 4 15×30 cm rectangles, on one side layer the taco-beef, 1 tbsp of sour cream, some corn and some avocado. Make sure to leave the edges clean, when all filling is where its supposed to be, brush the edges with some water and fold over the other side. Press the edges together with a fork and transfer them onto a baking tray lined with baking paper. Brush them lightly with egg wash and sprinkle some grated cheese on top. Bake until golden.

    This is super creative. I love tacos but they always get “messy” and this convenient puff pastry pocket looks delicious and functional!
