This is just one of those dishes I pull out of my sleeve when I have no idea on what to cook because it always taste good, it isn’t much fuss about it and taste event better the day after. And the mushrooms is completely addictive.

Iv’e been on this balsamic-kick lately, pouring it over pretty much anything. I just love that stingy, but still sweet taste that deepens all other flavors. I have one of this really old ones, where all that stinginess have completely disappeared and just left this sweet, sticky liquid that is fantastic both on ice-cream and on salads.

4 chicken thighs (with skin) 
5 tbsp natural yoghurt 
1 tbsp honey
1 tbsp olive oil
1 thumb sized ginger
1/2 chili, finely shopped
1 tbsp garam masala
1 tsp ground cumin
1 tsp hot paprika
zest from 1 lemon
Handfull of button mushrooms
4 tbsp balsamic vinegar 
1 tbsp maple syrup
1 red onion, finely chopped
Salt and pepper
How to make it; 
Mix the yoghurt, honey, chili, oil, garam masala, ground cumin, (peeled and grated) ginger, hot paprika and lemon zest and marinate the chicken thighs into this for at least an hour, preferably over night. You can cut small cuts into the thighs if you want, it makes them cook more evenly. 
Preheat the oven to 200 degrees, put the thighs on a baking tray, lined with baking paper, season them with salt and pepper and cook for 30-40 min until they are completely cooked and crispy. 
Pull the mushrooms apart to smaller pieces and start browning them in a pan with the onion, some butter and salt. Add in the balsamic vinegar and maple syrup, cook until most of it have absorbed into the mushrooms.
