Smoked salmon for me is something I only used to eat during holidays (and hotel breakfasts) but the last year I’ve discovered how easy and delicious it is. I love that you have this great pice of fish, straight out of the package and if you chose the right one its barely nothing “bad” in it (and now were talking those scary E-numbers, the artificial ones. Not all of them is bad, but many of them are).
This is just a easy-breezy-healthy-fast-lunch-salad that is packed full with good fats, protein and at least two parts of the daily five. And the most important – it taste great. I usually serve it with some crisp bread if I want to stay full for longer, but the protein and fats make this a really great options since it prolongs the feeling of being satisfied.
To make 1 yummy portion you’ll need;
75 g cold-smoked salmon
5 cm cucumber
Handful of finely sliced isberg-salad
1 tbs lemon juice
1 tbs sour cream/yoghurt
1 tsp honey
1 tbs chia seeds
Start with making the dressing; stir all ingredients together, season with salt and set aside.
Then continue by preparing the salad. Cut the cucumber in “half-moons” and the avocado in squares. Then finely slice the smoked salmon into nice, bite-sized pieces. Toss together, plate up and drizzle the salad with your dressing. Serve with a slice of bread.
