SAUSAGE TRAY BAKE

It’s something about those Fridays. I think we all share that feeling of finally being to exhale some of that week’s collected stress and pressures and inhale some calm and happiness again. Today, I’m exhaling all the exam-stress and inhaling  some weekend feeling. I have been watering my snap-pea plants, taking a walk in the rain (and trying to sort out my Hermione-hair afterwards) and looking forward to the mandatory Saturday breakfast with my best friend. Happy days basically.

What are you inhaling today?

This tray bake is simplicity at its finest. One tray and minimal of washing up but so so tasty and relatively healthy. It comes together quickly and minds if own business in the oven when I’m doing something else. The key to this dish lays in the choice of sausages. Since they are the hero of the dish you really want to get a good quality one. This is Chorizos and Plumas, both with a high meat-content and loads of flavor. The best thing is those veggies that lays under the sausages where all the natural fat have sipped down and turned them into perfect deliciousness.

SAUSAGE TRAY BAKE

Ingredients;
4-6 good quality sausages
1 large sweet potato
5 regular potatoes
1 red onion
15 cm leek
150 g feta-cheese
2 tbs dried thyme
Parsly to serve

The sauce;
1 cup creme cheese
2 tbs Sriracha
1 tbs black pepper
1 tbs lemon juice

Do this;
Preheat the oven to 200 degrees.

Start cutting up the potatoes in bite-sized chunks, all roughly equal in size. Line a baking tray with baking paper, toss the potatoes in some oil and salt and give them a 10 min head start in the oven. Cut the onion into large wedges and the leek 2 cm wide. After the first 10 min – place them on the tray with the potatoes, drizzle them with some oil, salt and pepper. Lastly  sprinkle over the thyme and place back in oven for 10 min.

Prick the sausages so they don’t explode in the oven, and place them over the vegetables. Sprinkle over the feta-cheese in large chunks and bake in the oven until the sausages are done and have got some color. Serve with some finely chopped parsly on top.

The sauce;  Combine everything and mix well. Place in the fridge until the rest is finished.
