CARROT AND HALLOUMI PATTIES (VEG)

Hi there, is Wednesday again and today I’m posting from a slightly different part of Sweden. I’m currently sitting on the floor of a hotel-room in Kalmar, a small town in the south-east of Sweden, after eating my third Christmas-table in the same amount of days.  The city is small but really cosy and all the christmas lights are up and shining creating little butterflies in my stomach. I’m more exited for christmas this year than ever before.

CARROT AND HALLOUMI PATTIES (VEG)

These carrot and halloumi patties was a invention from Friendsgiving last weekend. One of my friends is a vegetarian and I always struggle coming up with tasty things to serve to her. I’m getting better and better on eating/making vegetarian meals but I find it hard to make them feel as luxurious as some other dishes containing meat/poultry.

However, these were a complete hit wit the masses. The patties go super-crispy on the outside and the halloumi makes the consistency really soft on the inside. The addition Sriracha gives it a little kick and the hemp-seeds on top add a bit of crunch. Basically, the perfect vegetarian meal. Also, they are so easy to prepare the night before and just fry crispy in a pan just before serving.

CARROT AND HALLOUMI PATTIES (VEG)

Ingredients
250 g carrot
200 g halloumi-cheese
2 large eggs
40 g breadcrumbs
1 tsp onion powder
1 tsp Sriracha
Salt & Pepper
Hemp-seeds

Carrot and halloumi patties
Peel the carrots and grate them on the bigger side of the grater, then grate the halloumi and put everything in a bowl. Add in the eggs, breadcrumbs, Sriracha, onion powder and salt and pepper to taste.

With wet or oiled hands, form 6-8 patties. Then either carefully fry them in a pan (they are a bit fragile until they have cooked) with some oil or bake in a oven on 250 degrees celsius. Then firstly brush them with oil on both sides and bake for 15-20 min or golden.

    Three Julbord in three days?! Wow! What is your favorite? Mine is almost always gravlax and pickled herring followed by beetroot salad! The halumi and carrot patties sounds delicious. Halumi is a great cheese and it looks great paired with the carrot! Happy FF! 🙂

My fiancées family run a wholesale business, selling produce and everything you need to run a restaurant and every year they invite all of their customers to come and eat a christmas-table to see what they’re offering this year. So we eat kind a lot of them each year, next one is on Friday 🙂 My favorites must be the pickled herring, långkål if you ever heard about that? and off course the Swedish cheesecake with cloudberries and cream 🙂

        Ah that explains it! Yes know långkål and I love picked herring! We never had cheesecake, it was always rice porridge with blueberry sauce, I am from Halland, and 7 kinds of cookies that no one ate on Christmas even but they had a mandatory presence! 🙂

      2. Oh, we serve our rice pudding (Ris a la Malta, I have recipe up for that) without sauce. But its darn delicious! Haha, I think a lot of things are just there to be there if I’m honest. We always have smoked eel on ours but only one person in the family actually likes it 🙂 When did you move from Halland?

        I have to admit I forgot it was called Ris a la Malta!
        There are many things on the julbord that I most likely wouldn’t eat at all, there is so much to choose from! I like smoked eel but it is very rich, a little goes a long way!
        I moved around from the age it was time to leave home and I have now lived in the UK for a long time, I only came over for a couple of years! 🙂
